Shiitake mushroom
Deep umami · Days 7–14 to harvest

Shiitake

Lentinula edodes

The most-cultivated gourmet mushroom in the world. Deep umami, meaty texture, slightly smoky when seared. The reason miso exists.

Cook it

Slice, sear in butter, finish with soy. Add to stir-fries, broths, risottos, omelets. The stem is too tough to eat raw — save for stock.

Lion's Mane mushroom
Crab-like, seared · Days 8–14 to harvest

Lion's Mane

Hericium erinaceus

The wellness mushroom. Crab-like texture when seared. The food-world discovered it around 2018 and never stopped talking.

Cook it

Tear into chunks. Sear in butter with salt and pepper until golden. Serve on toast with aioli. The flavor is delicate — don't bury it.

Golden Oyster mushroom
Floral, citrusy · Days 6–10 to harvest

Golden Oyster

Pleurotus citrinopileatus

Bright yellow, almost tropical. Floral aroma, citrusy aftertaste. The one that surprises people who think they don't like mushrooms.

Cook it

Tear and sauté whole. Pairs with eggs, lemon, white fish, garlic. Goes fast — it has a short shelf life after harvest.

Oyster mushroom
Mild, buttery · Days 5–9 to harvest

Oyster

Pleurotus ostreatus

The default. Mild, buttery, slightly sweet. The weeknight mushroom that works with whatever's in your fridge.

Cook it

Slice, sear in olive oil, finish with herbs. Add to pasta, pizza, soup, eggs. The texture is juicy — don't overcook.

King Oyster mushroom
Meaty, scallop-like · Days 8–12 to harvest

King Oyster

Pleurotus eryngii

The meaty one. Stems are dense and scallop-like when scored and seared. The cap is more delicate — save it for last.

Cook it

Score the stems in a crosshatch. Sear in butter on high heat until caramelized. Finish with lemon and parsley. The cap goes on top.

Maitake mushroom
Roasted whole · Days 10–16 to harvest

Maitake

Grifola frondosa

Hen-of-the-woods. The slow one. Roasted whole, finished with soy and butter. Worth the longer wait.

Cook it

Roast whole at 220°C for 18 minutes. Finish with soy, butter, lemon. Or shred and pan-fry until crispy. The texture is the point.
